CHRISMAS DAY






Dear Santa, I'm older

Turkey Enchiladas


Ingredients:

* 3 cups cooked turkey, shredded
* 2 cups sour cream
* 2 cups shredded cheddar cheese
* 1 teaspoon salt
* 12 (10-inch) tortillas, corn or flour
* 1/3 cup corn oil
* .
* Sauce:
* 2 cans (4 ounces each) chopped mild green chile peppers
* 1 clove garlic, minced
* 2 tablespoons olive oil
* 2 cups chopped onion
* 1 teaspoon salt
* 1/2 teaspoon oregano
* 1/2 cup water
* 1 1/2 pounds stewed tomatoes

Preparation:
Combine turkey with sour cream, cheese and 1 teaspoon salt. Heat 1/3 cup of oil and dip tortillas in until soft and drain. Stuff with turkey mixture and roll up. Arrange, seam side down, side-by-side in shallow baking pan.

Prepare sauce. Sauté chiles with garlic in oil. Add stewed tomatoes, onions, 1 teaspoon salt, oregano and water. Simmer uncovered until thick, about 1/2 hour.
Pour the chile sauce over enchiladas and bake at 350° for about 30 minutes, or until hot and bubbly. Let set 5-10 minutes before serving.

SANTA






We went to the mall to see Santa. The Girls are getting so excited for Christmas, On school days I can,t get my girls up but they are out of school now and they get up at six,Hannah gets up and says is it Christmas yet it is cute, but not at six in the morning. I just want to throw my pillow at her. I hope my kids will be happy, what they get this year it was a really tough year this year. I,m sure Santa will get them what they want. We are going to just stay home this year Dave will make his yummy Turkey and I will make every thing else. I will put some pictures up that I took at the Mall. Rhonda

Families are every thing

Our lives are so busy and sometimes we live so far from our families. We miss the relationships with our families and often we do not even share important life events with them. We need to move back towards our families. If not in actual distance then at least we must move closer in our hearts. We live in a time where there are unprecedented communication possibilities. No one will ever love us unconditionally like our family can. We'd be fools not to take advantage of this opportunity.

HAPPY THANKSGIVING

Thanksgiving Feasting

When the Halloween pumpkins are gone,
And the leaves have all fallen to ground,
When the air has turned windy and cold,
Then Thanksgiving will soon be around.

Thoughts of loved ones all feasting together,
Pleasant pictures from past times appear
To dwell in each heart and each mind--
Then Thanksgiving is finally here!

The kitchen has scrumptious aromas,
The dining room looks oh, so fine,
Decorations with pilgrims and turkeys,
And now we are ready to dine!

First the napkins are placed on our laps;
Now the prayer for the meal to be blessed,
Then we stuff the good food in our tummies,
And we hope for it all to digest!

We went to a friends house on Saturday for a Birthday Party, Its was my very old friend Pam it was her Grandsons Birthday he turned 5. The girls had a ball they had a jumper with a slide. I have some pictures but It was so hard to take picture because they were all over the place.

Crazy Girls

FOR MY AUNT


My aunt is to me the greatest person in this world,
one of a kind and one in a million.

She has the biggest heart with the most caring touch,
which she shares with so many of us.

Her soul is made of pure love,
yet she's worth way more than gold.

In my eyes, she will always be,
the most beautiful person to walk the earth.

To me she's the smartest woman I know,
and it truly does show.

There is no one that compares to her,
no one that even comes close.

I appreciate all the advise she has given me,
I take it in with immense gratitude.

CARAMEL CHESSECAKE BROWNIES

1 package fudge brownie mix (8-inch square pan size)
1 package (14 ounces) caramels
1/4 cup evaporated milk
1 1/4 cups coarsely chopped pecans
2 packages (8 ounces each) cream cheese, softened
1/2 cup sugar
2 eggs
2 squares (1 ounce each) semisweet chocolate, melted
2 squares (1 ounce each) unsweetened chocolate, melted

Prepare brownie batter according to the package directions. Spread into a greased 9-in. spring form pan. Bake at 350 degrees for 20 minutes. Cool for 10 minutes on a wire rack. Meanwhile, in a microwave-safe bowl, melt caramels with milk. Pour over brownie crust; sprinkle with pecans. In a mixing bowl, combine the cream cheese and sugar; mix well. Add eggs, beating on low speed just until combined. Stir in melted chocolate. Pour over pecans. Bake at 350 degrees for 35-40 minutes or until the center is almost set. Cool on a wire rack for 10 minutes. Run a knife around edge of pan to loosen; cool completely. Chill overnight. Remove sides of pan before serving. Store leftovers in the refrigerator. Yield: 12 servings.

Before I was a Mom…
I made and ate hot meals.
I had unstained clothing.
I had quiet conversations on the phone.

Before I was a Mom…
I slept as late as I wanted.
And never worried about how late I got
into bed.
I brushed my hair and my teeth every day.

Before I was a Mom…
I cleaned my house each day.
I never tripped over toys or forgot words
to lullabies.

Before I was a Mom…
I didn't’t worry whether or not my plants
were poisonous.
I never thought about immunisations.

Before I was Mom…
I had never been puked on,
Pooped on,
Spat on,
Chewed on,
Peed on,
Or pinched by tiny fingers.

Before I was a Mom…
I had complete control of my mind,
My thoughts.
My body,
And my time.
I slept all night.

Before I was a Mom…
I never held down a screaming child,
So that doctors could do tests,
Or give shots.
I never looked into teary eyes and
cried.
I never got gloriously happy over
a simple grin.
I never sat up late hours
at night
Watching a baby sleep.

Before I was a Mom…
I never held a sleeping baby just because.
I didn't want to put it down.
I never felt my heart break into a million
pieces.
When I couldn't stop the the hurt.
I never knew that I could love someone so much.

SHEPHERD's PIE...

Easy Shepherd's Pie Recipe

Ingredients

* 1 1/2 lbs ground round beef
* 1 onion chopped
* 1-2 cups vegetables - chopped carrots, corn, peas
* 1 1/2 - 2 lbs potatoes (3 big ones)
* 8 tablespoons butter (1 stick)
* 1/2 cup beef broth
* 1 teaspoon Worcestershire sauce
* Salt, pepper, other seasonings of choice

Method

1 Peel and quarter potatoes, boil in salted water until tender (about 20 minutes).

2 While the potatoes are cooking, melt 4 Tablespoons butter (1/2 a stick) in large frying pan.

3 Sauté onions in butter until tender over medium heat (10 mins). If you are adding vegetables, add them according to cooking time. Put any carrots in with the onions. Add corn or peas either at the end of the cooking of the onions, or after the meat has initially cooked.

4 Add ground beef and sauté until no longer pink. Add salt and pepper. Add worcesterchire sauce. Add half a cup of beef broth and cook, uncovered, over low heat for 10 minutes, adding more beef broth as necessary to keep moist.

5 Mash potatoes in bowl with remainder of butter, season to taste.

6 Place beef and onions in baking dish. Distribute mashed potatoes on top. Rough up with a fork so that there are peaks that will brown nicely. You can use the fork to make some designs in the potatoes as well.

7 Cook in 400 degree oven until bubbling and brown (about 30 minutes). Broil for last few minutes if necessary to brown.

Serves four.

Family's are together forever...

Family


FAll Days

Friday was a very busy day for me We were having a sock hop for the school,so I was at the school all day getting things ready for it. It took all day the sock hop started at 6'00 but I was there at 3.o do help get it ready. I had to leave at 7'00 to take my little girls to a birthday party we did not get home till 10.00 that night. We are getting ready for Christmas I all ready started my shopping. Emma and Hannah our making their Christmas list it keeps getting bigger and bigger LOL. They still believe in Santa so I want to do the things I can for them but it won't be easy. I have a busy day next Saturday My best friend Pam's Grandson party is that day and so is our Thanking party at our church.My girl are so ready for Christmas they want to stat and get our Christmas stuff out and watch Christmas show I told the girl lets wait till December at least. I will put pictures up soon

Emma third grade project.


Emma made a sea turtle for her third grade class. We really had lots of fun working on this as a family. It took about 3 weeks to do because we had to make the turtle out of modeling clay,and then we had to paint it. Emma had to write a paper on her turtle. I think Emma did a great job on painting her turtle.

We went to our churches Halloween Trunk-er treat The kids had a ball. Emma was a cute bat and Hannah was a Cute little witch. Hannah and Emma Had great time with all her friends and Jasmine and Jada came too. Happy Halloween to everyone.
